Beets are cool season crops typically grown for their edible root. The greens are also edible as beets are closely related to chard. Red beets are most common, though there are also striped, yellow, and white beets. Some varieties grown in California include Detroit Dark Red, Bull’s Blood, Chioggia, Burpee and Golden.
